- The Layered Sombrero: Somewhere along the line between the 1970’s and today, AFTER Mother’s Against Drunk Driving (M.A.D.D.) got congress to de-fund all grants and loans for Advanced Bartending school coursework in North American the lore of this drink got lost and forgotten. A Sombrero is a Mexican Hat. It’s hot and the sun beats strong in Mexico, and the best protection is a Sombrero to keep the sun off of the head and out of the eyes. So pulling the Sombrero down low, and working all day long, the forehead is covered and protected while the face becomes deeply tanned. By the end of the week, the face is deeply tanned, and the forehead is as light as cream. The Sombrero Cocktail reflects that by being dark Kahlua below, and light Cream floating above. NO Shaking, Stirring or otherwise when it’s being made! Let the customer stir it. This is NOT a Kahlua Cream which IS shaken. THIS is a “Sombrero!”[↩]
