The 212 Cocktail

Method: Shake / Strain
Ingredients:
2 oz. Reposado Tequila
2 oz. Ruby Red Grapefruit
1 oz. Aperol 1
Garnish: None
HOW TO SHAKE A COCKTAIL
Fill the cocktail shaker half way with ice and add the cocktail ingredients. Close the shaker firmly, and hold it with your right hand wrapped around the top and your left hand cradling the bottom. Raise the shaker over your shoulder and shake hard for several seconds until the drink is chilled.
Using a Hawthorn Coil Strainer, strain it into whatever glass your drink calls for—a good shake will leave a layer of very fine ice shards on the surface of the drink. The Hawthorn Strainer’s coils allow for the shaken fruit juice’s frothy elements (including either fresh Egg White or Aquafaba) to pass through the coils and layer themselves on top of the shaken drink.

- Aperol is a classic Italian bitter apéritif (an alcoholic beverage usually served before a meal to stimulate the appetite, usually dry rather than sweet.) made of gentian (used for centuries as bitters to stimulate the appetite, improve digestion, and to treat a variety of GI complaints [eg, heartburn, vomiting, stomach ache, diarrhea]), rhubarb, and cinchona (the dried bark of the cinchona tree, which is a source of quinine and other medicinal alkaloids), among other ingredients.
