While, sure, we all work FOR someone small or large – our patrons  who pay us in tips come to see us personally, because WE know how to make good drinks, and they come to drink while we’re working, and often, usually, walk out when someone else is working.


So this time, let’s talk about the cocktail Mousse (in the most basic terms) since one of my bar customers expressed a strong desire for such a drink just the other day – which I told him I’d create, and name after him. This is the procedure, not the recipe, but the basics are here:

Beyond that on the basics of the Mousse I’d like to say that if you’re using an iSi Whipper, the procedure is this:

  Using an iSi Whipper to make a mousse cocktail involves a few precise steps to ensure the perfect texture and flavor. Follow these steps:

Ingredients:

  • 1 cup heavy cream
  • ¼ cup of your chosen spirit (e.g., vodka, rum, or liqueur)
  • 2 tablespoons sugar or syrup
  • 1 teaspoon vanilla extract or another flavoring (optional)

Equipment:

  • iSi Whipper (cream whipper)
  • iSi N2O charger

Instructions:

  1. Prepare the Ingredients:

    • In a mixing bowl, combine the heavy cream, chosen spirit, sugar, and any additional flavoring. Whisk until the sugar is fully dissolved and the mixture is smooth.
  2. Fill the Whipper:

    • Pour the mixture into the iSi Whipper. Do not fill it beyond the maximum fill line, typically marked on the inside of the canister.
  3. Charge the Whipper:

    • Screw the top of the whipper back on securely.
    • Insert an iSi N2O charger into the charger holder.
    • Screw the charger holder onto the iSi Whipper until you hear a hissing sound, indicating the gas is being released into the canister.
    • Shake the whipper vigorously 5-10 times to mix the gas with the liquid.
  4. Dispense the Mousse:

    • Hold the whipper upside down.
    • Press the lever gently to dispense the mousse into a glass or onto your desired serving surface.
  5. Serving Suggestions:
