Bars make money all day but a weird and interesting thing happens every night with every crowd when the rate of drinking increases exponentially and profits soar. It’s a phenomenon that has to be sensed and met with ramped up speed, endurance, and going full automatic with no thought given to glassware, garnishes, ingredients or pounding the orders at top speed into the POS system. That phenomenon is like a shark feeding frenzy. That phenomenon is like a school of ravenous piranha feasting on an elephant. That phenomenon occurs suddenly out of nowhere in a crowded bar and ends unpredictably when the group mind of the crowd decides it’s had enough. To the fast experienced skilled bartender it’s like riding a huge wave; stay ahead of it and it’ll be a long rewarding ride. Fall behind it and the revenue flow into the register frenzy is over.

 

Big tips aren’t what make bar owners rich. Bartenders and barmaids in low gear flirting and schmoozing for bigger tips are ok when it’s slow and alright for the steady customers, but not for the big hits when full throttle means over the top profits and revenu and giving your place the happening party destination reputation it needs. What’s your place’s draw? Another “hot (married) tattoo’d chick (with or without a couple of kids) behind the bar”? Ho hum. Snooze. If your bar’s a snooze, you lose!
